  • 24-30 ladyfinger cookies

Instructions

  1. Prepare Strawberries: In a bowl, mix sliced strawberries with 1 tablespoon of sugar. Set aside to macerate for about 15 minutes.
  2. Make Coffee Mixture: Combine the cooled coffee with 1 tablespoon of sugar in a shallow dish. Stir until dissolved.
  3. Whip Cream: In a separate bowl, whip the heavy cream, remaining 1 tablespoon of sugar, and vanilla extract until soft peaks form.
  4. Combine Mascarpone: Gently fold the mascarpone cheese into the whipped cream until smooth and well combined.
  5. Assemble Layers: Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them too long. Layer half of the dipped ladyfingers in the bottom of a dish.
